First remove the pits from the medjool dates. Soak the dates, macadamia nuts and pecans in water for at least an hour and drain prior to use to help with digestion. By soaking, you are breaking down the phytic acid and enzymes inhibitors so that the nuts can be absorbed properly. Soaking will soften and hydrate the dates.
Grease a 9 inch baking pan with coconut oil.
In a food processor, toss the soaked and dried macadamia nuts, pecans, dates, and 1/4 tsp of vanilla and process until the mixture is soft.
Form the mixture into the bottom of the prepared pan for the crust.
Pour the lime juice, agave, coconut milk, avocados, 2 tbsp vanilla extract and coconut oil into your high-speed blender and blend until a smooth creamy texture forms.
Pour the filling over the crust, cover with plastic wrap and freeze overnight.
Pull pie out of freezer 30 minutes before you are ready to serve so that it thaws a little.
