  1. Pour the pitted medjool dates into a food processor and blend until it forms a mushy ball.
  2. Add all ingredients (except for the coconut flakes) into a bowl and then repeatedly fold the ingredients over onto itself until well mixed.
  3. Lay plastic wrap along the bottom and sides of a square shaped baking dish.
  4. Fill the dish with your mixture. It will be firm.
  5. Lay plastic wrap on top and knead the mixture into a flat form in the pan.
  6. Lift plastic wrap to evenly distribute the coconut flakes on top of the granola. Lay plastic wrap back on top of everything and gently push the coconut flakes into the mixture.
  7. Place in freezer for 15 mins so that the shape will hold.
  8. Remove all plastic wrap and slice the granola into bars. Use pieces of parchment paper to stack the granola when storing them so that it doesn’t stick together.
  9. Enjoy! Best when stored in the refrigerator in between snacks.
