Yes, it’s 2018 and the Eagles football team are champions for the first time since 1960. I’m so excited to celebrate with my home town Philly! Philadelphia is a city full of history and despite this being the Eagles’ first super bowl win, our pride isn’t in the trophies, it’s in the camaraderie. I imagine the celebrations will go on for weeks as fans wear their football paraphernalia with pride and cheer on strangers that are also representing the green colors. Included in the mixture of ingredients that usually equals good vibes at football parties is good food, and so I wanted to share this recipe for an all green super bowl salad to celebrate many more exciting sports gatherings in the future.
This salad recipe is so simple to toss together. I had all the ingredients ready in my refrigerator and I was literally able to make the salad in 10 minutes before heading out to the football party potluck. Considering most american football parties, this might be the only raw vegan dish at the gathering so it’s good that it will be a fulfilling bowl of goodness with freshly diced avocado, raw broccoli florets, hemp seeds, green apple cubes, cucumber slices, lemon juice, a little olive oil, a pinch of salt and microgreens like mung sprouts and alfalfa sprouts. It’s loaded with protein from the hemp seeds and healthy fats from the avocado. Eating your water from the apples and cucumber will help to keep you hydrated if you’re planning to have alcoholic drinks. This salad is all green to symbolize the Eagles’ team colors, good health and auspiciousness in hopes that everything is always in favor of a win on the football field and within your own body.
